Description
Gail Borden (1801-1874) was born in upstate New York . He had several occupations over the years including surveyor , land developer (Galveston , Texas) , inventor of food preserving processes for meat and milk , and manufacturer . In 1856 he was granted a patent for a process for condensing milk and opened plants in New York and Connecticut . His third wife , Emeline Church , who had lived in Elgin and knew about the abundant dairy farms in the area , suggested he site another plant here. The Elgin Milk Condensing Company began in 1865 in a former tannery near Brooke and North Streets . Mr . Borden never lived in Elgin , preferring to spend his time in New York and Texas .
